FOOD & BEVERAGE SPECIALTY MANAGEMENT

  • Develop and design menus for multi-unit and diverse types of operations
  • Provide recipes, training, costings for each menu and meal
  • Develop and design specialty menus for spas, weekly rotation, theme buffets, incentive travel functions, weddings, room service etc
  • Develop juice and health bar operations
  • Develop modern use and presentation of local island seafood, produce, ethnic and traditional dishes
  • Develop efficiency and motivational training for F & B staff to upgrade service, technical skills and productivity
  • Provide basic sanitation, food safety and handling courses for all service and production staff
  • Train and indoctrinate purchasing staff and receiving staff on quality controls, product knowledge, proper storage and care of all F & B products
  • Provide cost analysis for effective management
  • Develop staff and management evaluation and review procedures

Services can be contracted for new or existing projects and operations targeting completion, quality standard or financial goals. Quote can be given by the job, daily or weekly rate, or by percentage.

Due to frequent requests, PIRC has undertaken to provide the following additional services for its clients:

  • Relief management or resort sitting - the full operations or separate departments
  • Management and key personnel placements
  • In-house mystery shopping - complete operations or by department with full analysis and recommendations
